Cooking Instructions

1. Prepare the Eggs

[] Crack the eggs into a small bowl.
[] Add the fish sauce.
[] Add the sliced spring onions.
[] Whisk until smooth and fully combined.

2. Cook the Eggs

[] Heat the oil in a pan over medium heat.
[] Pour in the egg mixture.
[] Gently stir and push the eggs continuously to form soft, creamy curds.
[] Remove from heat while still slightly runny; the residual heat will finish cooking.
[] Top with chopped coriander.

3. Serve
