Ingredients

[] |10 limes |(peeled completely)
[] |20g garlic |(pounded)
[] |5 Thai red chilies |(pounded)
[] 2 tsp palm sugar
[] 4 tbsp fish sauce
[] |30g shallots| (thinly sliced)
[] |10g sawtooth coriander| (thinly sliced)
[] |5g coriander| (chopped)
[] 2 tbsp dried shrimp
[] 20g roasted peanuts
[] |2 kaffir lime leaves| (thinly sliced)

Cooking Instructions

1. Prep the limes

[] Peel the limes completely, removing all skin and white pith.
[] Set aside.

2. Pound the flavor base

[] In a mortar and pestle, pound garlic and chilies until coarse.
[] Add palm sugar and fish sauce.
[] Pound again until everything is fully combined.

3. Add the aromatics

[] Add shallots, sawtooth coriander, coriander, dried shrimp, peanuts, and kaffir lime leaves.
[] Lightly pound just enough to bruise and mix. Don’t overdo it.

4. Add the lime

[] Add the peeled limes into the mortar.
[] Gently toss and turn with a spoon. You want the limes coated but not crushed.

5. Serve and enjoy

[] Transfer to a plate.
[] Enjoy immediately while fresh and vibrant.
