Ingredients

Yield: For 1 kg duck breasts or thighs

Protein


[] 1 kg duck thighs

Herbs & Spices

[] 4 coriander roots
[] |1 tbsp garlic | (chopped)
[] 10g ginger
[] 1/2 tbsp toasted coriander seeds
[] 1/2 tbsp ground white pepper

Seasoning


[] 1/2 tbsp sweet dark soy sauce
[] 1 1/2 tbsp light soy sauce
[] 1/2 tbsp green-cap seasoning sauce
[] 1 tbsp oyster sauce
[] 1 tsp sugar
[] 1 tbsp five-spice powder

Instructions



1. Prepare the marinade

[] Pound or blend together all herbs and spices: coriander roots, garlic, ginger, toasted coriander seeds, and ground white pepper.
[] Grind into a smooth, aromatic paste.
[] Add in all seasoning ingredients: sweet dark soy sauce, light soy sauce, green-cap seasoning sauce, oyster sauce, sugar, and five-spice powder.
[] Mix well until you have a thick, cohesive marinade paste.

2. Marinate the duck

[] Coat the duck thighs evenly with the marinade.
[] Cover and refrigerate 3 hours to overnight to let the flavors fully absorb.
